Skirt Steak

A cut full of flavour with a coarse texture. This long thin steak benefits from tenderising with a steak hammer prior to cooking. Great when left in a marinade 24 hours before cooking. Extremly popular in Mexico for Arrachera and Fajitas. The skirt steak is also known as Philadelphia steak. This thin steak is best cooked on a cast pan or griddle on a high heat searing for a few minutes each side. Allow the skirt steak to rest for 5 minutes in a warm area before serving.

Diced Skirt steak also makes a tremendous stew producing a rich beefy gravy when cooked. Once very popular here in Lanarkshire with the older generation that knew how to cook the more economical cuts to create wholesome hearty dishes full of flavour.
